Homemade crispy tortilla chips

This Reward Day makes everyone’s favourite guilt-free Mexican condiment from scratch with the help of this easy guacamole recipe. Swap store-bought corn chips for homemade crispy tortilla chips and taste the difference :
Recipe:

INGREDIENTS:

3 Hass avocados
1/3 cup (80 ml) lime juice
2 cloves garlic, finely chopped
1/2 small red onion, finely chopped
1 long red chilli, finely chopped
1 medium vine tomato, seeded, finely chopped 1/2 teaspoon cumin
1 bunch fresh coriander, finely chopped
Sea salt & freshly ground black pepper, to taste 6 soft burrito tortillas
Vegetable oil for deep frying

METHOD:

Step 1:
Halve avocados lengthways, remove seed, and scoop flesh into a medium bowl. Add lime juice and mash to combine. Add garlic, onion, chilli, tomato, cumin, coriander, salt and pepper, then mix well. Cover with plastic wrap and set aside.
Step 2:
Tear each tortilla into eighths (they will resemble corn chips). Heat oil in a wok or deep pan. Cook tortilla chips in batches, until golden and crisp, (they will crisp further when removed from oil) and drain on absorbent paper. Serve immediately.
